  • 2 tablespoons sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon baking soda

  • 3 eggs

  • 1 3/4 cups buttermilk

  • 1 teaspoon vanilla

  • 1/2 cup canola oil


  1. Combine flour, sugar, baking powder, baking soda, and salt in a medium size mixing bowl.
  2. Beat eggs, buttermilk, vanilla and oil in a large bowl. Add dry ingredients, mixing together until smooth.
  3. Preheat waffle iron. For each waffle, put about 1 cup batter in waffle iron; spread batter within ½ inch of edge. Close lid and cook until crisp and golden, about 4 minutes. Repeat with remaining batter. Serve warm topped with your favorite syrup or fresh fruit.
