Yields: 12 Muffins

  • 1 cup milk

  • 1 egg

  • 1/3 cup coconut oil, melted and cooled

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 cup erythritol

  • 1/2 cup blueberries


Preheat oven to 350°F.

Line a 12-cup muffin tin with paper liners. In a large bowl, whisk together milk, egg, and oil. Add flour, baking powder, salt, vanilla, sugar and blueberries; gently mix the batter with only a few strikes.

Spoon batter in lined muffin tin. Bake for 18 to 20 minutes or until toothpick comes out clean.
