Spiced Mixed Berry Sugar Free JamEd Velasco2021-12-21T09:46:41-08:00 Project Description Prep Time: 20 minutesCook Time: 15 minutesYield: about 3 cupsIngredients 1 1/3 cups BakeGood Granular Sweetener 1 1.75oz box sugar free pectin 1 cup water 4 cups mixed berries, crushed* Pinch of salt 2 whole star anise, optional 1 ½ teaspoon ground cinnamon ¼ teaspoon ground cloves *note: if using frozen berries, defrost, crush then measure Instructions In a heavy saucepan, whisk together the BakeGood Granular Sweetener and sugar free pectin. Switch to a rubber spatula and stir in the water, salt, star anise (if using), cinnamon and cloves. Bring to a boil and set a timer for 2 minutes once the mixture comes to a rolling boil. Add the crushed berries, stir to combine and bring back to a rolling boil for 2 minutes. Jam can be refrigerated up to a month, frozen up to 3 months or water bath canned for longer storage.
